Someone needs to explain this to me. What is syphon coffee? Or vacuum coffee? Or magical coffee apparatus that I'm afraid will explode in my face if I ever used this?

Despite hearing about syphon coffee methods on-and-off again on internet discussions on the best way to make coffee, I'd only ever seen syphon coffee in public use at the surprisingly-upscale Lynn Canyon Cafe, located at the top of the eponymous park's suspension bridge. This is a public park, right? Which means this coffee shop is also publicly-funded, right? And this publicly-funded coffee shop chose to use such a sophisticated and fancy way to make this caffeinated beverage?
